School Food and Child Nutrition Services, SAISD |
During the School nutrition service rotation at SAISD I observed different roles of assistant director of School Food and Child Nutrition Services. The rotation at SAISD provided me an opportunity to review nutrition standards, goals and objectives of both CACFP and CNP. I had the opportunity to perform an on-site audit to measure compliance at an elementary school. Special diets management is one of the many hats an assistant director of food services wears. During my rotation I learned about special diets and menu substitutions and monitored compliance with the prescriptions. SAISD is a proud sponsor of Fresh Fruit and Vegetables Program. I utilized my creative skills to prepare educational material for teachers and students for the second half of the school year.
Following are some highlights of my experiences: · Learned about the special diet request procedures and physician’s referral system. · Evaluated special diet data for HS children with fruit and egg allergies. · Participated in a marketing and promotion meeting for Breakfast in Classroom program proposal. · Prepared five FFVP calendars based on seasonal produce, presentations based on pertinent nutrition information, physical and fun facts and children’s activity materials and educational materials for PA system. · Participated in school breakfast and lunch service activities with managers and food service staff at an elementary and a high school. · Monitored cash registers and POS with the cashiers and a supervisor. · Performed audits of CACFP Monitor Review forms for eleven schools and checked compliance. · Alphabetically organized the audited Monitor Review forms with production records and recipe sheets and prepared a discrepancy list. · Attended monthly managers’ meeting and learned about FLSA, worker’s comp, umbrella coverage for auto insurance, waste management,etc. · Learned about the operation of Texas Association of School Nutrition.
