 The three years in the coordinated program in dietetics and nutrition exposed me to a plethora of active learning opportunities. I had to complete multiple assignments and design numerous projects in groups as well as independently. Each assignment and each project honed my skills and lead me to a new level of advancement. As I look back at my accomplishments, the expansion of my knowledge and skills is quite evident.

One Year at a Time 

Year 1 

Community health promotion had been the focus during the first year of the program. During the second semester I participated in a school food service management practicum that introduced me to school food service management. 

I completed several projects including a poster presentation in Laredo for older adults and a healthy meal management group project for a family of four.

These projects enabled me to understand the beliefs and behaviors of a variety of population in regards to nutrition. It also gave me the opportunity to design and deliver supplemental material to help develop healthy behaviors and promote health.   




Standardized Recipe for Cooking Demonstration

Year 2 

During the second year of the CPD program, my projects and assignments mainly showcased disease prevention and health promotion.

For the Community Nutrition Service Learning practicum I was assigned to Social and Health Research Center, San Antonio. I, with another intern, designed a comprehensive worksite wellness plan for the employees of five different clinics in South San Antonio area.

During the year, I applied scientific knowledge and evidence based practice in the case study presentations, community wellness projects and Special Topic course.

In addition, I successfully utilized principles of food service management in designing and implementing my Independent Study project. 

Year 3 

The focus remained on health promotion and disease prevention during the last year of the program. Along with many community nutrition projects I had the opportunity to utilize evidence-based practice and scientific research in performing Medical Nutrition Therapy and writing critical research reviews and   case studies. As part of my internship experiences during the third year, I also designed multiple projects applying the principles of dietetics and nutrition.
