Special Topics in Nutrition and Dietetics

Special Topics offer students an opportunity to explore personal interests and skills, by conducting research or developing projects. Students are required to work under the supervision of an assigned professional. I decided to work on a family wellness pilot project under the supervision of Jennifer Sides,RD, then Health and Wellness Center dietitian at Randolph Air Force Base.

Randolph Fit and Healthy Pilot Program

 

Randolph Fit and Healthy pilot program was specifically formulated to help Randolph Elementary families make small and practical changes to create a healthier lifestyle through nutrition intervention and physical activity.

The program was designed to provide the participants themed activity plans and supplemental tools and material relating to nutrition and healthy lifestyle. Activities were designed on three topics; Munch on Rainbow , Limit the Box, Let's Walk and Together we Eat. Each topic incorporated specific activities to be practiced one week each month. The Randolph Fit and Healthy pilot program included an introductory presentation for parents and staff, project narrativean introductory sign-up letter for parents, monthly newsletter on Munch on Rainbow , Limit the Box, Let's Walk and Together We Eat and detailed activity plans with resources. The pilot project was designed to involve the students and their families from any one grade level from grade 3rd to 5th.
